Oyster and Brie Soup

Remember this post where I told you about the amazing Oyster and Brie soup finished with Champagne, Chives, and Lemon Aïoli?
Well I tracked down the recipe online! I haven't tried it yet but I can't wait to give it a go for a future special occasion! Maybe Valentines Day?
Any rate...

Here's the recipe I found via Cook Eat Share:
6 ounce brie

48 ounce half-and-half

6 ounce roux cool

2 ounce fish base

1 c. Champagne

8 ounce oysters

8 ounce oyster juice

  Salt to taste

  Freshly-grnd white pepper to taste

Directions

Put half-and-half in a thick-bottom pot. Heat nearly to boil. Add in roux to thicken, simmer 10 to 15 min. Add in brie, stirring constantly to heat. Add in fish base, strain and return to pot.

In a separate pot, cook oysters in their own juice. Strain mix into first pot, then add in cooked oysters, juice and Champagne to mix. Add in salt and white pepper to taste.

This recipe yields 6 to 8 servings.

I'll let you know when I do eventually try it out!

Osborne Lights: Part 2

Today I'm sharing part 2 of my photos from the Osborne Lights Festival at Hollywood Studios in Walt Disney World, Florida.
On a side note, I'm not tech savy enough to figure out why the sound on my videos won't play... So... If you'd like to hear the awesome music that these lights are timed to so spectacularly... (You really should!) I am going to direct to my Instagram account where the sound and image are working. I am still posting the videos here sans the music though because they are still pretty.

What I Ate: The Brown Derby

Last night I headed off into the gorgeous Florida sunset to meet my family for a Holiday dinner at the Brown Derby in Disney's Hollywood Studios.

The restaurant's them is Classic Hollywood and it was all dressed up for the Holiday Season.
We were seated in the Bamboo room, which was a first for all of us.
It's a smaller private dining room off the large main one and bamboo did indeed reign supreme.

For dinner I started with the Oyster and Brie soup finished with Champagne, Chives, and Lemon Aïoli.
Soooo amazing! I highly recommend it and am hunting for the recipe. Absolute yummm!
Next I had the Blue Lump Crab Spring Rolls, Snow Crab Claw, and an Asian Slaw with spicy Miso Aïoli.
Also super tasty.
Then for my main course I enjoyed the Charred-glazed Filet of Beef with a Red Wine Reduction, topped with a Cabernet and roasted Shallot Butter, over White Truffle Oil Wild Forest Mushroom Mashed Potato, and Sautéed Haricot Verts.
Everything was divine and my family really enjoyed all their various dishes, the only exceptions being that the lamb my Mom ordered was undercooked and my brother never received a spoon for his Cioppino soup... But despite that I would definitely eat there again.
Down south pineapples are a sign of welcome.

Afterwards we headed over to the Swan & Dolphin Hotels to meet up with my sister's fiancé where he was busy working all day and night. MLB business was in full swing! The gigantic lobby was packed and ESPN was there set up in front of this gorgeous white poinsettia Christams tree to report on all the latest sports news happening.

There were soooo many men jammed into the space just walking through it was intense but it was pretty neat to see too.

The Osborne Family Spectacle of Dancing Lights! Part 1

After moving back to the Sunshine State I was fortunate enough to get a Florida resident pass to Disney World which I love and put to good use as often as I can.
So I want to share a bit of Disney magic with you all here.

Last week I was able to go to the Ocbourne Lights at Hollywood Studios and my sister is coming in from Texas today so we're going again tonight so I'm sharing the Christmas light love with you in multiple parts.
