Bits of my Summer...

So... I totally dropped off the face of the internets this summer... Between being sick regularly (ugh...) and super busy I didn't seem to have enough time to live online and offline so I chose off. :) In the spirit of sharing though I'm making a re-newed effort to get back to this space.
This Fall finds me starting new classes and endeavors and busier than ever but that also means I have tons to share! So, I'm starting with the cool stuff from this summer and then I'll work my way forward.
Here are some random bits:
We watched Fourth of July Fireworks via a pontoon boat on Bay Lake over at Disney World.
It was pretty epic in my opinion!

We got silly with our sweet crazy pup!

We watched some amazing sunsets.
I celebrated my birthday in style, thanks to my spectacular Husband and lovely family! (Here's to 31!)
Had more Abigail the Westie time!
Enjoyed Florida wildlife despite the heat.
Which included the loveliest family of cranes! (They're under the tree in the distance, I didn't want Abigail to scare them off.)
Enjoyed all the beautiful nature here.
Saw some magical moons.

And were continuously blown away by the colors of Florida's sunsets.

Stunning!

Inspire Me Tuesday

What do you see when you dream?

Or daydream?

I often picture Paris alight with the sun's glorious rays casting golden colors amongst the shadows...

It reminds of a time when I was young and free. When I lived in Paris and just the living there made the world seem so big and so small and so possible all at the same time. When my hopes were fresh and my spirit barely bruised...

I am grateful for all that life has sent me since then, both the joys and the sorrows.

But sometimes I dream of that time... Of that freshness and wonder.

I smile at that girl who knew so much and so little. If I could, I'd thank her.

Because when I daydream about sunsets in Paris, I daydream about her.

And she reminds me that anything and everything is possible still.

Always possible.

Lunar Eclipse!

This Tuesday morning a very special lunar eclipse will be happening that you don't want to miss! That is if you're into those things, and I am! If you are too check out what Space Weather has to say below:

"LUNAR ECLIPSE, TUESDAY MORNING: The mainstream media is abuzz with reports of a "blood moon" on Tuesday morning. The scientific term is "lunar eclipse." On April 15th at 6 minutes past midnight Pacific Time (3:06 a.m Eastern Time), the Moon will enter the sunset-colored colored shadow of Earth, producing a total eclipse of the Moon:

The color of Earth's shadow, and thus the color of the eclipsed Moon, depends substantially on the amount of volcanic ash and other aerosols floating in the stratosphere. According to atmospheric sciences professor Richard Keen of the University of Colorado, the stratosphere is clear. This means the eclipse will be not "blood red," but rather bright orange.

See for yourself. The event will be visible from Australia, New Zealand, and all of the Americas: visibility map. It's so bright, even observers in light-polluted cities will have no trouble enjoying the show. Got clouds? No problem. The event will be broadcast live on the web by the Coca-Cola Science Center at Columbus State University in Georgia.

Disney Day: A Very Disney Sunset Stroll

Not long ago the Husband and I decided to pop over to Disney's Coronado Springs for a quick bite and stroll.
The setting there is very romantic so it's one of our favorite spots to go.
As we left the house we saw this awesome sliver of a rainbow in the sky amidst all the sun rays. It was a lovely surprise.
Once there we grabbed some yummy empanadas to go and found a spot outside under the sunny sky.

We then saw the next scene in the sky's beautiful playof spectacular evening displays.

These whispy fluffy clouds were amazing. They spanned more than half the sky.

I really enjoyed all the blooming flora and fauna too. Birds of paradise are one of my favorite flowers.

Not sure what these yellow bloomed trees are but they were so lovely.

Then as the sun started to set we strolled around the the lake.

Every turn brought a gorgeous new vista.

The sun was really outdoing herself splashing the best colors from her palette across the sky...

So pretty.

Of course I had to sneak in a picture of the awesome resort pool we passed.

But it was the sky that really made the evening lovely.

One of the prettiest sunsets I've enjoyed in a while.

It really reminded me that I should take more time to stop and enjoy all the bounty surrounding me.

First Day in Maui So Far!

So after this...
We landed last night to this...
Then today we woke up to this...
The condo we're staying in has an amazing view!
We even had the special treat of a rainbow while enjoying our morning cup of joe.
Then we headed over to the Ritz Carlton to see my sisters wedding site.
I loved this beautiful altar.
And the view there is stunning!
The beach is stunning.
And the ocean is so many gorgeous shades of blue...
Me, my sister the bride, and the husband.
A bit wind blown.
On the walk up off the beach we stopped at the Jean Michell Cousteau Ambassador Conservation Center where they had Loco and Moco the pigs.
Of course I had to stop and say hello!
They were the cutest! Such little sweeties!
Then we headed over to Star Noodle for lunch. It's supposed to be some of the best noodles on the island and is where Sheldon from Top Chef cooked for a while (not sure if he's still there...).
Any rate... It was sooo yummy!
We started with the Ahi Avo, a seasoned raw ahi and avocado dish that was superb.
Next we indulged in some steamy deliciousness.
These steamed pork buns were so good with the hoisin sauce and spicy mustard they came with.
I'm really loving the steamed bun combo these days.
I had the the Fried Saimin noodles minus the egg, cause I'm allergic. It had kamaboko (the pink and white fish pieces), spam, bean sprouts, and scallions. I wasn't so sure about the spam cause it was my first time trying it... It wasn't bad but it was the dish as a whole that was super good.
The husband had the Lahaina Fried Soup which consists of Fat Chow Funn, ground pork, and bean sprouts. It was yummy too but mine was better.
I washed it all down with some Teazu: iced tea, yuzu, and simple syrup. Definitely something to try to replicate later!
Next we headed back to the condo my parents rented where my sister is staying. Tristan was watching for humpback whales and enjoying the waves and kit boarders.
The view is gorgeous!
So right now we're just chilling out and enjoying all of this!
